Chinese egg noodles cooked in fresh chicken broth are chilled and topped with shredded chicken and a blend of sesame oil, sesame paste, soy sauce, red wine vinegar, peanut oil and minced garlic. Add a touch of chili oil for spice, if desired.

Pasta is pasta, but the spicy peanut sauce is a knock out. Natural peanut butter is dolled up with soy sauce, crushed red pepper, veggie broth and garlic. Add a bit of scallion, bell pepper and cilantro - and toss.

Cubes of eggplant are cooked with garlic and red pepper until tender. Then the fun begins. Two different sauces are stirred in, and when mixed and fragrant, the eggplant is spooned onto plates and covered with a disk of crispy, pan fried noodles.

For an exotic, earthy flavor add sliced shiitake mushrooms and bell peppers to a pot of boiling capellini. Toss the warm noodles with a sauce of rice wine vinegar, soy, oil and grated ginger and sprinkle with parsley to serve.

Wonderful pungent flavors make this dish perfect for a dinner party. The sauce is made from soy sauce, Chinese black vinegar, sesame oil, garlic, a tad of sugar and a sprinkling of green onion. It smells wonderful when it 's folded into hot soba noodles.
