finely ground almonds
1 1/4 cups
sifted all-purpose flour
instant coffee powder
granulated sugar for decoration
I've been making a recipe almost identical to this for 30yrs and it's a family favourite.
I normally use 4oz ground almonds, 4oz granulated sugar, 8 oz butter, 8 oz all-purpose flour, 2 tbsp instant coffee granules. Mix up the first 4 ingredients, then dissolve the coffee in 1 tsp of water, and add it in as a paste - mix it in well. Add a few drops more water if necessary. Then chill, roll out & cut, chill again, then bake at 325F. For me, no extra sugar is necessary as I like the coffee flavour to come through and I dont' like very sweet cookies! I've also made the same recipe using lemon zest and lemon juice instead of the coffee, or orange zest/juice with a tsp of cinamon.
It was just ok. Very crumbly, had to add more butter. This is very different.
It's a yummy recipe! There are a few things that can make it better. I had to add about 1/2 a tablespoon more of butter, and I used a mixer to get everything mixed well enough. It isn't a very sweet cookie, so decorate with that white sugar A LOT to cut the bitterness of unsweetened coffee.
This recipe is great and it looks really good if you make the cookies look like coffee beans by making balls with a cut mark in the middle then dip them half in chocolate.
This recipe creates a unique cookie that is a complement to sweetened beverages such as tea or coffee.
A bit bitter, my coffee granules didn't manage to blend with the dough very well, but still tasty.
