  1. Preheat oven to 350 degrees F. Bake coconut, stirring occasionally, 5 to 6 minutes or until toasted. Set aside.
  2. Melt butter in a large skillet over low heat. Add dates and pecans; cook over low heat, stirring constantly until dates are softened. Cool to touch (about 5 minutes).
  3. Beat egg substitute and SPLENDA® Granulated Sweetener for 3 minutes at medium speed with an electric mixer; add to date mixture. Cook over low-heat, stirring constantly, until mixture thickens (about 3 minutes). Stir in rice cereal. Cool to touch. Shape into 1-inch balls. Roll in toasted coconut.

These are good. It may sound odd, but they remind me of pecan pie. The rice krispies become moist and chewy creating a nice texture.

Great taste- Love the crunchiness combinations of the coconut flakes, and rice crispies. I would definitely serve this to my guests.

This was tasty, but seemed to have a little too much coconut in it - it overtook the dates and nuts. A good thing though is I didn't miss the sugar in it.

This was much better tasting than it appeared. Has a rich, nutty, date flavor (similar to baklava). Very elegant tasting for an afternoon tea.

Tasty, better than I expected frankly, not being a big fan of large amounts of coconut. It has an almost nutty, rich flavor and a fun texture. It's not the most gorgeous desert, but push people to give it a try, they will be pleasantly surprised.
