1 cup unbleached all-purpose flour or whole wheat pastry flour
1 tablespoon sugar or honey, or to taste
2 teaspoons baking powder
1/2 teaspoon salt
1 cup Silk Pure Almond Original or Vanilla
2 tablespoons canola oil
1 egg
Excellent recipe! Not flat at all! I used pastry flour and 2% milk instead of Silk. Awesome!
I used half of a 1/4 cup measure for the vegetable oil. Tip: you can use the same 1/4 cup measure you used for the oil to pour out exact measures of batter. The oil helps the batter not stick to the measure!

Delicious pancakes. Really light and fluffy. Made a couple of adjustments because of lack of ingredients. Used only 1 tablespoon of corn oil and used hemp milk instead of the vanilla milk. Will make again.
Reviewer who gave a two star rating used baking soda instead of baking powder. Flat pancakes and baking soda after taste. Been there, done that.
I doubled the recipe, hearty eaters at home. I did add 2 tsp of vanilla as well. quick, easy and yummy. Might try cinnamon next time, or apples or something, kids like that. Served it with eggs and sliced pears. very good.

Not a very good recipe. I followed it to the letter and the pancakes were very flat. Wouldn't try it again. The dough, however, tasted nice. It had the right amount of sugar.
This recipe was fantastic! I kept eating them of the griddle instead of waiting to put syrup on them at the table. I did sub the silk/almond milk with skim milk and added a tsp of vanilla extract. Very tastey!
