Classic Belgian Waffles

Ingredients

  • 2 cups all-purpose flour
  • 1/4 cup granulated sugar
  • 2 teaspoons baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon nutmeg
  • 1/2 teaspoon cinnamon
  • 1 pinch salt
  • 2 large eggs
  • 1 cup milk
  • 1 cup buttermilk
  • 1/4 cup canola oil (plus more for greasing the pan)

Directions

  1. Warm up waffle iron.
  2. In a large bowl, sift together flour, sugar, baking powder, baking soda, nutmeg, cinnamon, and salt.
  3. In a small bowl, whisk together eggs, milk, buttermilk, and canola oil. Pour over flour mixture and stir together. Do not overmix.
  4. For each waffle, lightly spray or brush waffle iron with canola oil. Pour in about 1/2 cup of batter and spread to edges with a knife. Cook for 30 seconds with lid open. Close lid and cook for about 4 minutes or until golden brown. Serve with your favorite topping like maple syrup, toasted nuts, syrup...

These did turn out tender. We topped them with a vanilla butter sauce.

These were quite good! :) My kids and hubby ate them up! They stuck some to my waffle iron....
