Ingredients

  • 2 cups all-purpose flour
  • 2 teaspoons ground cinnamon
  • 1 1/2 teaspoons baking soda
  • 1 teaspoon salt
  • 3/4 cup vegetable oil
  • 2 eggs
  • 1 teaspoon vanilla extract
  • 3 cups finely chopped peeled baking apples
  • 2 cups sugar
  • TOPPING:
  • 2 tablespoons butter or margarine, softened
  • 1/3 cup packed brown sugar
  • 1/3 cup sugar
  • 1/2 teaspoon ground cinnamon
  • 1/2 cup flaked coconut
  • 1/3 cup chopped walnuts

Directions

  1. In a mixing bowl, combine flour, cinnamon, baking soda and salt. Add oil, eggs and vanilla; mix well (batter will be thick). Toss apples with sugar; fold into batter. Spread into a greased and floured 13-in. x 9-in. x 2-in. baking pan.
  2. For topping, beat the butter, sugars and cinnamon in a small mixing bowl. Stir in coconut and walnuts; mix well. Sprinkle over the batter. Bake at 350 degrees F for 40-45 minutes or until the cake tests done.
