Oh boy, was this ever good! Like many reviewers, I chose Cindy's version because it was virtually a "one pot" recipe (which I love)! I used smoked turkey sausage, browned really well. I found myself without bell pepper, so I subbed a small zucchini, diced, instead. I also omitted the celery, as I don't care for it. I cheated a tad and used the 10-minute boil in a bag rice, which I threw in a few minutes before serving. I also used a bag of cooked shrimp (tails off) and tossed those in about 3 minutes before we ate....just enough to warm up the shrimp and get a good coating of the yummy flavors in this dish. Next time, I'd only use one bay leaf, but other than that, I can see that this will be a regular meal during the fall/winter months. Delicious, easy, and satisfying....I've hit the trifecta!
