I LOVE this recipe! I first tried this for a Super Bowl potluck so I would have something healthy to eat and it was the one dish everyone was raving about. They even asked for me to send them the recipe which I did of course. I did make a few substitutions: 1/3 cup lime juice and 2 tablespoons honey, plus a good amount of salt to really bring out the flavors.
I served it over a salad which included crunchy romaine lettuce, frozen corn (thawed), sliced olives, avocado, jicama, tomato, cotija cheese and a little extra salt and pepper in the salad (in addition to in the dressing -it just makes for a more full flavored dish).
If you're wanting some protein or to make this for a meal, try adding some chopped, cooked chicken breast (I prefer BBQ-ing a chicken breast with just olive oil and salt and pepper, letting it cool for ten minutes and then chopping and adding to the salad). You could also add some tortilla chips for extra crunch.
I've since made this recipe numerous times and I LOVE it more every time! Definitely added as a regular recipe in our home.
