This fresh-tasting dish is an easy all-in-one meal. The bacon, eggs and hash browns make it hearty. The green broccoli and red paprika give it a look that fits the season.

I first made this festive breakfast pie when entertaining friends on Christmas morning. Each year I was asked to make my famous 'Christmas Morning Pie' and the name stuck! But because of its great flavor, I make it year-round.

THIS RECIPE was always one of my family's favorites, and it remains so for my husband and me. When we plan a trip by car, I make the frittata the night before, stuff it into pita bread in the morning and microwave each one for a minute or two. Then I wrap them in a towel, and down the road an hour or so, we enjoy a still-warm breakfast! -Carol Blumenberg, Lehigh Acres, Florida

Hearty and filling, this dish is one I usually take to potluck brunches. My family asks me to fix this often in the colder months, and I'm always happy to oblige.

This egg dish is true to my Italian heritage. Italians make frittatas with many combinations of ingredients. I'm a creative cook, so I came up with this simple recipe based on how I remember my grandma making this dish. Even at that, I'm not sure I make it the same each time. -T. You would never guess that egg substitute takes the place of eggs in this fun variation on a traditional frittata. Chock-full of fresh asparagus, this dish is perfect for a light springtime lunch or brunch. The recipe was sent in by James Bates of Hermiston, Oregon.
