Directions

  1. Heat 1 tablespoon of olive oil in a skillet over medium-high heat. Cook and stir the chorizo, garlic, and onion in the hot oil until the chorizo has browned and no longer pink, and the onion has softened, about 10 minutes. Pour off any excess grease, then transfer to a bowl.
  2. Fill a large pot with lightly salted water and bring to a rolling boil over high heat. Once the water is boiling, stir in the rotini, and return to a boil. Cook uncovered, stirring occasionally, until the pasta has cooked through, but is still firm to the bite, about 8 minutes. Drain well in a colander set in the sink.
  3. Pour the water and 2 tablespoons olive oil into the skillet that the chorizo was cooked in. Bring to a boil over high heat, then add the broccoli rabe, cover, and cook until tender, about 4 minutes. Uncover, and stir in the chorizo mixture; bring to a simmer. Toss the pasta with the chorizo mixture in a large bowl. Season to taste with salt and black pepper, and sprinkle in the Parmesan cheese. Stir gently before serving.

Thought this was really good. I was not familiar with how to handle broccoli rabe and so was a little stemmy, but overall great flavors and interesting mix of ingredients.

This is a really delicious simple meal! The only thing I'd change is add a little more broccoli rabe and a little less pasta, but that's just personal preference. It was really good as written!

Really simple, but great flavour! I added mushrooms to the onion/chorizo mixture (I add mushrooms to everything). Thanks for a great recipe!

This was quick and easy as well as tasty. I made it with broccoli. Next time I will add a bit of crushed red pepper as my chorizo was on the mild side.

delish! i wanted to make it a bit more healthy so i used whole wheat pasta and added roasted sweet potato and okra and used low fat chicken parmesan sausage. definitely a keeper!

I took some creative liberty with this recipe. I didn't have any chorizo on hand so I subbed with some spicy merguez sausage. I also added some sundried tomatoes to give the dish a bit more colour, and drizzled some roasted garlic-infused olive oil on the pasta before adding it to the meat and broccoli. Very tasty!! I'll definitely make again!

I had good spicy chorizo to make this, but only broccoli florets. Found it to be a bit dry for our tastes, so added 1 can of diced tomatoes and it was perfect.
