ground beef or meatloaf mix (beef, veal, pork)
1 3/4 cups
Sargento® Bistro® Blends Shredded Chipotle Cheddar Cheese or Sargento® ChefStyle Shredded Sharp Cheddar Cheese, divided
chili sauce or mild picante sauce, divided
finely chopped onion
crushed tortilla chips
Very tasty and easy to make. I didn't really change much on this one. The only extra thing I added was some Green Ortega Chillis. I added one can to the meat mixture and than I smeared a half can of chilli's on top of the loaf. I also at the end when you are supposed to put cheese on top of the meatloaf I added cheese and corn chips crumbs. VERY GOOD! And Easy!!!
Very good meatloaf, but not enough "chipotle" flavor.
This was well received by somewhat picky husband who said the blend of flavors was outstanding. I used sharp cheddar and Pace medium picante sauce. It took a full hour to cook. With a foil lined pan, clean up was a breeze.
This is a really excellent meatloaf recipe... I've been searching for a tasty TexMex meatloaf, and this certainly fits the bill! Has just the right "kick." I also used a small can of green chilies, putting about 3/4 of the can in with the meat mixture and the remaining bit I mixed in with the chili sauce topping... it was just soooo good! I also baked it for an hour.
My family really liked this meatloaf! The only thing I did different is that since I didn't have the spicy cheddar, I added 1 1/2 tsp of our favorite chili seasoning. My son called it "nacho" meatloaf, and ate the leftovers for breakfast.
It was great also because we have gluten intolerance in our family (no gluten in the tortilla chips)
this recipe is great, i tweaked it some since my store didn't have chipotle cheddar and i forgot to buy some in adobo sauce. so i just used regular cheddar. the chili sauce gave it an awesome twist, i divided the meat into two loaves and cooked it in a slow cooker on low until done. next time i make this i will definitely use chipotle peppers in adobo sauce!
I have never particularly liked meatloaf but this is delicious.
Mighty fine hunk of meat. I especially liked the crushed tortilla chips as a filler. They gave a nice subtle mexican flavor. I used the picante sauce rather than the chili sauce. It came out a little drier than I would have liked. But then, I didn’t want it to be greasy so I went with very lean hamburger. And, of course, you can always smother it in catsup or pico de guaya.
