Chipas (Argentinean Cheese Bread)

"These delicious, Argentinean breads are small balls of cheese bread made from tapioca starch. They are quick and very easy to make. You could even make the dough ahead of time and keep it in the freezer. If you cannot find Argentinean cheeses, Italian cheese will do just fine."

Directions

  1. Preheat oven to 350 degrees F (175 degrees C). Oil a baking sheet with cooking spray and set aside.
  2. Stir together egg, milk, cheese, and butter in a large bowl. Sprinkle in tapioca starch and flour; stir in to form a dough. Knead dough for two minutes on a lightly floured surface, then roll into golf ball-sized pieces, and place onto prepared baking sheet.
  3. Bake in preheated oven until golden brown, 10 to 15 minutes.

This chipas are excellent! yum yum yum... I mixed two types of cheeses: shredded parmesan and cubed fontina. Tip: at the last 5 minutes of the baking, sprkinkle parmesan cheese on top for extra... yumminess. good luck!

these were pretty good, i didn't have any tapioca starch so used plain old corn starch instead. kids loved them warm with garlic butter at dinner. thanks!

I hadn't eaten this bread since I was in the Peace Corps. The bread was wonderful--chewy and tasty and I didn't need a brick oven to bake it!

I love these. Perfect. Thank you for this great recipe. They remind me of a Brazil style cheese bread. Super easy to make. Well, your fingers get a little sticky but that is worth it.
