I really enjoyed this. I used fresh thyme, but my tomatoes are kaput, so I used a can of diced. If I make this again, I will keep the almonds out and sprinkle them on at the end. Though I liked them, my husband didn't care for them.

This looked like a great starting point, and it was!! I'm trying to watch (a little bit!) my calories and fiber, etc., so I used half rice and half bulgur. Also added lots of garlic and was more generous with the thyme. Also used the boxes of chicken stock, instead of bouillon cubes. Also replaced the pepper with chopped hot peppers. I omitted the almonds. Also, I noticed I didn't need the full amount of cooking time. Thanks to Dorothy for this great foundation, I'm really grateful!

This was delicious, but it makes way more than 2 servings. I only used two chicken bouillon cubes and left out the salt, it was already salty enough. I didn't have any fresh tomatoes so I used canned, and next time I will leave out the almonds, I didn't care for the crunchiness.

I used leftover cooked wild rice, added chopped fresh garlic to the saute, and used fresh thyme as well as lemon pepper. It made preparing the meal quick and it was delicious.
