I had never had chicken paprikash before and was not disappointed with this recipe. It's really good. I followed the advice of some other reviews and substituted olive oil for the bacon grease, added 1 chopped red bell pepper (sauteed with the onion and garlic), used chicken breasts diced into cubes, substituted a cup chicken broth instead of water and omitted the tomatoes. I also sprinkled just a little bit of cayenne in, and used a Hungarian paprika (brought back from Hungary by friends) that I think is Édesnemes (a noble sweet paprika).
Served over spätzle, it was delicious. I can't wait to make it again!
