I've got VERY picky eaters, and am kind of a wine snob, so I didn't think it would work (I could only fine Marsala at the grocery store - ack! - but it was DELICIOUS! They were licking the bottom of the pan :) I had to adjust a little based on what I had on hand, and even imperfectly it was good - next time I'm going to stick to the recipe and I'm sure it will be even better! I didn't have mushrooms, and as another reviewer mentioned, I browned the chicken in the pan (I only had thighs not breasts), then transferred to a baking dish to finish at 375 for 15 min. I had to use merlot instead of sherry, would have been better with sherry! I tripled the sauce...for a family pack of boneless thighs, fed my 5 big eaters just fine.
