This recipe was suggested for the Recipe Group last week, but was not selected. This sounded like something we’d like, so I decided to make it anyway and I’m glad I did, as Hubs and I both really enjoyed it. I used my own skinless boneless chicken breasts that I marinated in some additional balsamic dressing for most of the afternoon. I used a flour tortilla instead of pizza crust that I lightly coated with EVOO and we grilled it on both sides to crisp it up. While Hubs was grilling the chicken I let the crust cool and then spread it somewhat thinly with the garlic and herbs cheese spread. Then I piled on the salad greens, adding sliced green onions, the chicken, and some little slices of strawberry tomatoes to add color. Drizzled it with some balsamic dressing (I used the dressing from Byrdhouse Marinated Tomatoes and Mushrooms, also from this site, and very good.) and we dug in! This is not your typical pizza, and some of the toppings tend to fall off, but very delicious none the less. We’ll be making this again!!
