fresh lime juice (keep the peel)
Salt and pepper to taste
skinless, boneless chicken breasts

flour tortillas (store bought)
shredded Cheddar cheese (low-fat optional)
bell pepper, seeded, grilled and julienne
onion, sliced and grilled
These were the best chicken fajitas I have made. I added some liquid smoke to the marinade, reduced the amount of oil and added a teaspoon of sugar to balance the tartness of the lime juice. This marinade recipe is a keeper!
