Chewy Pecan Bars

Ingredients

  • 1/4 cup butter or margarine, melted
  • 4 eggs
  • 2 cups packed brown sugar
  • 2 teaspoons vanilla extract
  • 2/3 cup all-purpose flour
  • 1/4 teaspoon baking soda
  • 1/4 teaspoon salt
  • 2 cups chopped pecans
  • confectioners' sugar

Directions

  1. Spread butter evenly in an ungreased 13-in. x 9-in. x 2-in. baking pan. In a mixing bowl, beat eggs, brown sugar and vanilla. Combine flour, baking soda and salt; gradually add to egg mixture. Stir in pecans.
  2. Spread into prepared pan. Bake at 350 degrees F for 30-35 minutes or until browned. Dust with confectioners' sugar. Cool on a wire rack. Cut into bars.

Very good. Make sure you use the powdered sugar because bars are not very sweet without it.
