Chewy Drizzled Cinnamon Chips Cookies

  1. Beat butter and brown sugar in large bowl until fluffy. Add corn syrup and egg; mix well.
  2. Place 1 cup cinnamon chips in microwave-safe bowl. Microwave at HIGH 1 minute; stir. If necessary, microwave at HIGH an additional 15 seconds at a time, stirring after each heating, just until chips are melted when stirred. Stir melted chips into butter mixture.
  3. Stir together flour, baking soda and salt; add to cinnamon chips mixture, beating just until blended. Cover; refrigerate dough about 1 hour or until firm enough to handle.
  4. Heat oven to 350 degrees F. Shape dough into 1-inch balls; roll in nuts, lightly pressing nuts into dough. Place on ungreased cookie sheet.
  5. Bake 8 to 10 minutes or until golden around edges. Cool slightly; remove from cookie sheet to wire rack. Cool completely. Drizzle with CINNAMON CHIPS DRIZZLE. About 5 dozen cookies.
  6. CINNAMON CHIPS DRIZZLE: Place remaining 2/3 cup cinnamon chips and 1-1/2 teaspoons shortening (do not use butter, margarine, spread or oil) in small microwave-safe bowl. Microwave at HIGH 1 minute; stir until chips are melted and mixture is smooth.

These taste and smell great! The color is a little weird, but you forget about that when you bite into it! YUMMY!

These were pretty easy to make, and smelled great in the oven...My hubby LOVED them, though he was the only one...It just seems to be lacking something to counter all of the cinnamon...If you REALLY like cinnamon, though, you will probably like this recipe!

To drizzle, I use a heaping 1 tsp. of shortening and then microwave. I use a spoon to drizzle the mixture on the cookies. Increasing the shortening slightly is the key to no clumping.

must have done something wrong. all the cookies after they cooled, got hard as can be. good taste though.

I thought these cookies had a really good taste, but they were rather time consuming to make. To help the person that had trouble with the drizzle clumping, I suggest you put the icing in a ziploc bag and cut a small cut in the corner of the bottom of bAg and squeeze out drizzle that way.

These cookies were really good however I couldn't get the drizzle to actually "drizzle" it just fell in clumps so I left it off the rest of the cookies.

Suggest microwaving morsels at a lower power to prevent chips from burning. Cookies tend to spread quite a bit so need lots of space on the cookie sheet. Difficult to tell when "done". A delicious, crisp cookie. Next time will grind pecans to a finer texture.

This cookie was very good. We couldnt keep our hands out of them! :o) My husband even deemed it worthy of a Christmas cookie!
