From a family that generally dislikes coconut...this cookie is AWESOME...made them as part of a tin of holiday cookies for friends and couldn't keep my family from eating them! Freeze well too!

These are the best coconut cookies I've ever tasted!!! They are simple to make and when I put half the dough in the fridge to cook later, those ones turned out great too.
