Ingredients

  • 10 cherry, grape, or small heirloom tomatoes (or mix thereof)
  • 2 teaspoons dried oregano
  • 2 teaspoons balsamic vinegar
  • 1 tablespoon olive oil
  • 1/4 teaspoon salt
  • 1 pinch ground black pepper

Directions

  1. Halve tomatoes and toss with oregano, oil, vinegar, salt, and pepper. Let sit for a minute or two to let flavors develop. Enjoy.

  • Tomatoes should be kept at room temperature.
  • This recipe is optimal for Phase 1 of the South Beach Diet.
