Directions

  1. Heat oven to 350 degrees F. Line large cookie sheets with parchment paper. Let cookie dough stand at room temperature for 10 minutes to soften.
  2. In medium bowl, break up cookie dough. Add nuts, cherries, coconut and vanilla. Mix with wooden spoon or knead with hands until well blended. Shape rounded tablespoonfuls of dough into balls. Place 2 inches apart on cookie sheets.
  3. Bake 15 to 20 minutes or until edges are light golden brown. Cool 3 minutes. With back of teaspoon, make indentation in center of each cookie. Spoon 1 teaspoon preserves in each indentation. Cool completely, about 20 minutes. Store in covered container.

Great recipe! Made this as a dessert for a pot luck at work and EVERYONE loved them! Also made them for thanksgiving dessert and a couple people asked for the recipe. This is a winner, and easy to make!

I absolutely love this recipe. After having made over a dozen time consuming yet lovely and delicious Christmas cookies, I decided to try this very easy recipe.....and it stood up to all the other cookies on my tray. The only change I made was to use chopped almonds instead of the macadamia nuts. The main reason being I had almonds on hand and secondly I think their flavor combines better with cherries and coconut. These are a new Christmas favorite for me.

This was ok but not great. The preserves made it too sweet. Definitely only let the dough sit out for 10 minutes. Mine sat out a bit longer and the cookies came out flat. Used almonds instead of macadamias and cut way back on the coconut - to about 3/4 cup. The recipe has potential but needs some tweaking.
