To make this a little better, use gold potatoes (as gold potatoes are always better), and add a cup of shredded Monterey Jack cheese. Also, there were far too many red peppers, I would only use 1/4 of what the recipe calls for. Finally, if you add chopped leeks instead of the chopped onions, it adds a much better flavor. Overall, the recipe given was much to bland.

I reduced the amounts by quite a bit - just made it at home for my small family. Added some garlic to seasonings, kept salt and pepper about the same amt. even though went down 1 lb. potatoes and cut onions/butter/flour/cheese/red pepper to match. Really liked the Swiss cheese.
