Ingredients

  • 12 medium potatoes, peeled and cubed
  • 2 cups shredded Cheddar or Swiss cheese, divided
  • 1 1/4 cups milk
  • 1/3 cup butter or margarine, softened
  • 1 teaspoon salt
  • 2 eggs, beaten

Directions

  1. Place the potatoes in a saucepan and cover with water; cover and bring to a boil. Cook until tender, about 15-20 minutes. Drain and mash. Add 1-3/4 cups cheese. milk, butter and salt; cook and stir over low heat until cheese and butter are melted. Fold in eggs. Spread into a greased 13-in. x 9-in. x 2-in. baking dish. Bake, uncovered, at 350 degrees F for 25-30 minutes. Sprinkle with the remaining cheese. Bake 5 minutes longer or until golden brown.
