Ingredients

  • 3 eggs, lightly beaten
  • 2 1/2 cups all-purpose flour
  • 2 cups grated carrots
  • 1 1/2 cups flaked coconut
  • 1 cup sugar
  • 1/2 cup milk
  • 1/2 cup vegetable oil
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1/2 cup maraschino cherries

Directions

  1. In a mixing bowl, combine the first nine ingredients; mix well. Fold in cherries. Spoon into three greased 7-1/2-in. x 3-3/4-in. x 2-1/4-in. loaf pans. Bake at 350 degrees F for 40-45 minutes or until bread tests done.
