Cheddar Tomato Dumplings

Ingredients

  • 2 tablespoons finely chopped onion
  • 1 tablespoon finely chopped green bell pepper
  • 2 tablespoons vegetable oil
  • 2 tablespoons flour
  • 1 (28 ounce) can RED GOLD® WHOLE PEELED TOMATOES or REDPACK® WHOLE PEELED TOMATOES in JUICE
  • 1 tablespoon minced celery leaves
  • 1 teaspoon sugar
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper
  •  
  • Dumplings:
  • 1 cup flour
  • 2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 2 tablespoons shortening
  • 1/2 cup shredded Cheddar cheese
  • 1/2 cup milk

Directions

  1. In a large skillet, saute onions and green bell pepper in oil until tender. Add 2 tablespoons flour; stir well. Gradually blend in RED GOLD® or REDPACK® WHOLE PEELED TOMATOES, breaking up tomatoes with a spoon.
  2. Add celery leaves, sugar, salt and pepper; bring to a boil over medium heat. Cook and stir for 2 minutes. Reduce heat; cover and simmer for 5 minutes.
  3. For dumplings combine flour, baking powder and salt in a bowl; cut in shortening until crumbly. Add cheese. Stir in milk just until moistened.
  4. Drop by tablespoonfuls onto simmering tomato sauce. Cover and simmer for 20 minutes or until a toothpick inserted in a dumpling comes out clean (do not lift the cover while simmering).

Footnotes

  • Tip:
  • To make fluffy dumplings that are not soggy on the bottom, drop the dumpling dough on the stew pieces rather than directly into the liquid. The dumplings will steam rather than settle into the liquid and become soggy. Also be sure the stew is piping hot so the dumplings will start to cook from the steam right away and become fluffy.
