  1. Heat oven to 300 degrees F. Spray square baking dish, 8x8x2 inches, with cooking spray. Heat oil in 10-inch nonstick skillet over medium-high heat. Cook onions in oil 6 to 8 minutes, stirring frequently, until golden brown; remove from heat.
  2. Trim crusts from bread. Spread mustard on 1 side of each bread slice. Arrange 4 slices, mustard sides up, in baking dish. Layer 1 cup of the cheese, the tomato and onions on bread. Place remaining bread, mustard sides down, on onions. Beat milk and eggs until well blended. Pour evenly over bread.
  3. Bake uncovered about 1 hour or until center is set and bread is golden brown. Sprinkle with remaining 1/2 cup cheese. Let stand 10 minutes before cutting.

This is a great make a head dish. I have made it several times and wach time it has been a big hit. It does reheat well, in the rare event there is any left over. I plan on incorporating this into our holiday brunch this year.

Like everything I make, I changed the recipe a bit. I omitted the tomato, and added ham. I also sauteed some hot peppers with the onions. It was excellent.

I used what I had on hand- regular white bread and tomato paste instead of tomatoes. There were a LOT of onions in it, although I halved the amount of onions I put in it. My husband, who dislikes onions, will normally eat them if they're 'disguised' well. He hated this recipe. I thought it was really good, however!!! My daughter loved it as well, but we both love onions! I'll make it again, but when he's out of town!
