Perfect for a quick and easy dinner! I used a mix of mild and hot sausage for grilling. I didn't bother cooking the tomatoes, I just let them marinate in the olive oil, mozzarella, fresh basil, salt and a bit of cracked black pepper. I also added just a splash of balsamic vinegar. I grilled the red onion vs. chopping it and marinating it. I toasted the rolls and these sandwiches were great!
