Ingredients

  • 1/3 cup shortening
  • 2/3 cup sugar
  • 1 egg
  • 1 3/4 cups all-purpose flour
  • 2 teaspoons baking powder
  • 1/4 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1 cup diced cantaloupe
  • 1/2 cup chopped nuts

Directions

  1. In a mixing bowl, cream shortening and sugar. Beat in egg. Combine the flour, baking powder, baking soda and salt; add to creamed mixture alternately with cantaloupe until blended (mixture will appear curdled). Fold in nuts.
  2. Transfer to a greased 8-in. x 4-in. x 2-in. loaf pan. Bake at 350 degrees F for 55-60 minutes or until a toothpick inserted near the center comes out clean. Cool for 10 minutes before removing from pan to a wire rack.

smelled good and made a pretty loaf of bread but had absolutely no flavor.
