  1. Combine the first four ingredients in a bowl; stir well. Cover, chill and reserve.
  2. Combine the goat cheese, chopped bell peppers, cream cheese, and jalapenos in a bowl, and stir well.
  3. Spread about 2 tablespoons of the cheese mixture over each tortilla, and fold in half.
  4. Cook quesadilla in a large non-stick skillet with cooking spray over medium heat, approximately 3 minutes per side. Cut each quesadilla half into thirds (each person gets 3 wedges).
  5. Arrange quesadilla halves and 1/4 cup papaya mix on each of 6 plates. Garnish with cilantro sprigs if desired.

I went out on a limb and made this for my boyfriend and father who aren't the most adventurous eaters. I waited for them to admit that they really liked it to tell them it contained goat cheese. It tastes so good and is so simple to make (easy to pre-prepare a lot beforehand as well), and I love that it's pretty healthy- this is definitely going to become a household favorite. Some notes on the recipe, when it says 'combine first 4 ingrediants' it means the papaya, cilantro, onion, and lime. I also used twice as much of both cheeses because I didn't really think 2 tbs per tortilla was enough.

My husband and I really enjoyed this one. I did have to cut a few corners...we didn't have goat cheese, so I jused feta, and I didn't buy a fresh papaya, I used canned tropical fruit. This was easy, and yummy.

I wish there were half stars, I would give this three and a half. It's good, but not anything to really rave about. It definitely needs the fruit salsa to make the dish. Having said that, both my boys (aged 3 and 1) ate it right up! The peppers in the cheese mixture don't add too much heat - or really even flavour. If you wanted more of that, I would recommend increasing the peppers.

I liked this mostly because it was a tastey way to use excess pappaya that I had. The clarification for order of prep from another reviewer was helpful. A nice, light, tastey lunch.

Nice dish but I think the prep time was more around 30 minutes. Also, I adjusted to my taste. I used neufchatel cheese, reduced the amount of papaya, added artichoke hearts, added avocado slices, and then added chicken to my husbands quesadillas.

Was very good but missing something, maybe more jalapeño, even though I used a whole one. Previous reviews are correct with order and that the salsa makes the dish
