Original Recipe Yield 4 sandwiches
 

Ingredients

  • 2 cups chopped cooked chicken breast
  • 1/2 cup PHILADELPHIA Reduced Fat Italian Cheese & Herb Cooking Creme
  • 1 green onion, sliced
  • 1 tablespoon KRAFT Grated Parmesan Cheese
  • 1 tablespoon fresh lemon juice
  • 8 slices multi-grain bread
  • 4 small romaine lettuce leaves
  • 1 tomato, cut into 8 thin slices
  • 4 KRAFT Mozzarella Cheese Slices

Directions

  1. Spray grill pan with cooking spray; heat on medium heat. Combine first 5 ingredients.
  2. Fill bread slices with chicken salad, lettuce, tomatoes and cheese to make 4 sandwiches.
  3. Cook 3 min. on each side or until golden brown on both sides.

Footnotes

  • Variation Caesar Chicken Salad Stuffed Tomatoes: For a refreshing twist, omit the bread and mozzarella cheese. Place scoops of the chicken salad onto tomatoes that have been cut into wedges. Serve on lettuce leaves.
  • Serving Suggestion: Serve with a piece of fruit and cold glass of skim milk.
  • Substitute: Substitute a skillet for the grill pan.

if you don't use very toasted bread it falls apart! Otherwise it was pretty good
