Buttermilk Oatmeal Bread

Ingredients

  • 1 cup rolled oats
  • 1 cup buttermilk
  • 1/2 cup vegetable oil
  • 1 egg
  • 1/2 cup packed brown sugar
  • 1 cup all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt

Directions

  1. Mix oats with buttermilk. Let stand for 1/2 hour.
  2. Stir oil, egg, and brown sugar into oat mixture. Stir together flour, baking powder, soda, and salt: mix into oat mixture. Pour batter into a greased and floured 8 1/2 x 4 1/2 inch loaf pan.
  3. Bake at 350 degrees F (175 degrees C) for 55 to 60 minutes, or until done.
