BUSH'S® Three Bean Confetti Salsa

Original Recipe Yield 8 servings

Ingredients

1 teaspoon chopped garlic
1/4 cup red wine vinegar
1 tablespoon Dijon mustard
1/4 cup extra virgin olive oil
1/2 (15 ounce) can BUSH'S® Black Beans, drained and rinsed
1/2 (16 ounce) can BUSH'S® Pinto Beans, drained and rinsed
1/2 (15.8 ounce) can BUSH'S® Great Northern Beans, drained and rinsed
1/2 cup cooked canned corn
1/4 cup diced red pepper
1 (3 ounce) can chopped green chiles, drained
1/2 cup chopped red onion
2 tablespoons chopped cilantro
1 chopped avocado (cut right before using)
Salt and black pepper to taste

Directions

In a small bowl, combine garlic, red wine vinegar, and mustard in bowl. Let sit for 5 minutes. Whisk in olive oil. Set aside.
Place beans, corn, red pepper, chiles, red onion and cilantro in a medium bowl. Pour in vinegar mixture, gently mix.
Fold in avocado and adjust seasonings.
