To make this a one pot meal (and possibly improve the flavor), I chopped the veggies up really small and roasted for 1/2 hour in the pan. Before putting the veggies in the oven, I drizzled with olive oil, added 1 T bacon fat for extra flavor, sprinkled generously with salt and Italian seasoning. After the veggies were done cooking, I added the beans, roasted bell pepper in lieu of pimiento and cheese and stirred well. I topped with a generous sprinkle of Italian seasoned bread crumbs. Was good, though hubby said he would like it better with a little crushed red pepper next time.
