  1. Cook sweet potatoes in boiling water in 3-quart saucepan 15 minutes or until tender. Drain.
  2. Meanwhile heat oil in large nonstick skillet on medium-high heat. Add onion; cook and stir 4 minutes. Add curry powder; cook an additional 2 minutes, stirring frequently. Remove from heat.
  3. Mash cooked sweet potatoes. Stir in onion mixture, sour cream and salt.

After making this I was shocked that no one had reviewed it yet! It is DELICIOUS exactly as written and incredibly easy. The curry is subtle enough for my 8 year old, yet interesting. I will make extra next time.

This had an off flavor to it. I was really disappointed because we love sweet potatoes and curry but just not together I guess. Maybe the sour cream gave it the odd flavor. Will not make again.

Great way of making sweet potatos exciting. The curry smelled wonderful and the sour cream added the right amount of creaminess and zing. My toddlers ate these up as did my teens and the hubby. Served with brown rice and a simple marinated chicken breasts for a quick and healthy weeknight dinner.

I made this at Christmas because my oven went out on Christmas Eve. Wow! I loved the potatoes more than the traditional sweet potatoes with marshmallow on top. One recommendation, use MILD curry powder if you are making this recipe for a gathering. I used my favorite curry and it was too spicy for some.

We thought this was a great combination of sweet and savory flavors, and it was great to find a sweet potato recipe that didn't include a sweetener. I followed the recipe pretty closely, although I used a different brand of reduced fat sour cream, but you could certainly change your ingredient proportions to suit your own tastes. I will definitely make this recipe again.

My husband hates sweet potatoes. We get our veggies farm direct and they came with our order, so I didn't have a choice but to make them and he agreed to try what I made. I was VERY VERY happy with how these turned out. No butter we used light sour cream and a indian curry mix when frying up the onions. My husband loved them and even took seconds. This is the 1st review I have ever written up for ANYTHING. I really just wanted to say thank you! Healthy and the best sweet potatoes I have ever had - I will be making these again!!

Less than o.k.! No one in my family cared for this recipe. I ate it and would definitely rate it higher for just myself. Curry needs meat flavor (like broth).

Fantastic! I was looking for a recipe for sweet potatoes that didn't add sugar, or marshmallows. This was absolutely delicious, the whole family loved it. The curry is just enough. It was a perfect side dish to a roasted pork loin. Mmmm. By the way, I made the recipe as stated with no substitutions or alterations(except for the brand name-sorry-it's not even available in my area).
