Directions

  1. In 12-inch nonstick skillet cook sausage and onion over medium heat until sausage is browned. Remove sausage and onion with slotted spoon; drain grease.
  2. Heat 2 tablespoons oil to skillet; add Simply Potatoes®. Spread in an even layer; press down lightly with spatula. Cook 6 to 7 minutes or until golden brown on bottom. Drizzle with an additional 1 tablespoon oil. Turn Simply Potatoes® over with spatula. Continue cooking 6 to 8 minutes or until Simply Potatoes® are golden brown and tender, turning again if necessary.
  3. In medium bowl stir cooked sausage, onion, sour cream and mustard until well blended. Stir mixture into Simply Potatoes®. Cook until heated through. Season with salt and pepper.

I made this for dinner last night, and it was a hit in my house, even for my potato-hating husband! I didn't have Simply Potatoes, so instead I peeled and shredded 3 potatoes in my food processor. I used fresh breakfast sausage instead of the Italian style, because I needed to use it up, and I added a chopped yellow pepper along with the onion and sausage. I followed the cooking directions pretty closely; once I added the sausage mixture I cooked on medium-high or so for about 10 more minutes, so that everything cook crisp up again and the flavors could blend. Also, it seemed to be missing that extra something when I tasted it near the end, so I added about 1/2 t. dried dill. Perfect! I also topped each serving with a fried egg (fried only in cooking spray, so it is still as healthy as poached, but faster!) I will make this again sometime!
