Ingredients

  • 1 cup olive oil
  • 2 tablespoons balsamic vinegar
  • 1 cup tomato juice
  • dried basil to taste
  • salt and pepper to taste
  • 1 (1 pound) loaf day-old bread, cut into 1 inch cubes
  • 1 (7.5 ounce) package smoked tofu, diced
  • 2 large tomatoes, diced
  • 2 cups chopped fresh spinach

Directions

  1. In a large bowl, whisk together the olive oil, balsamic vinegar, tomato juice, basil, salt, and pepper. Toss with the cubed bread, tofu, tomatoes, and spinach just before serving.
