Bow Tie Pasta with Sausage and Veggies

  1. Bring a large pot of lightly salted water to a boil. Add pasta and cook for 8 to 10 minutes or until al dente. Drain, reserving 1 cup of the cooking liquid and return pasta to the pot.
  2. In a large skillet, over medium heat, bring 1/2 cup water, oil and sausages to a boil, cover and cook until the water evaporates, about 6-7 minutes. Remove lid and cook until sausages are well browned, 6-7 minutes longer. Remove sausage, cool slightly and slice into bite-size rounds.
  3. Add onions, peppers and squash to the hot skillet. Season lightly with salt and pepper; cook until tender and golden, about 4 minutes. Add garlic and cook until fragrant, about 1 minute longer. Add tomatoes, sausage and 1 cup basil; simmer to blend flavors, about 5 minutes longer.
  4. Pour tomato mixture into pot with pasta, and over low heat stir in Parmesan cheese. Add enough pasta cooking liquid to moisten thoroughly if necessary; toss to coat. Serve with extra cheese and basil passed separately.

Very kid friendly, my three year old loved it- so did my husband. However I substituted chicken apple sausage in the recipe. We'll definitely make this again.

I would use fresh cherry or grape tomatoes, especially in the summer time. I would also chop up the onions.

This was a great, fresh summer dish. I used hot italian brats and had great results. Definitely a keeper!

My husband and son loved this recipe. I followed the recipe exactly and it came out wonderful. I would not change a thing.

Great tasting recipe. I ignored the "whole boiling sausage thing" and merely took the sausage out of the casings and browned. Added a little bit of Italian seasoning, fresh ground black pepper, a little sugar, hot sauce, used zucchini instead of yellow squash and used frozen diced onion as a timesaver. Served with penne pasta instead of rotini. Finally, I added some marinara sauce. Delightful dish and great tasting.

This was wonderful! Next time I will double the recipe as the next day leftovers tasted even better. Great combination of flavors.
