I'm going to let you in on a little secret: I crave buffalo wings on a regular basis, but I rarely find any I like. All my siblings love any kind of chicken wings - comes from way back when my Dad bought them so often when we were kids and they were very cheap (40 years ago). At restaurants or pizza joints, I always buy bone-in buffalo wings, and don't like the dried out "boneless wings". But I tried this recipe on a lark tonight, and they were excellent. I cut up the tenderloin of chicken breasts into small chunks, and used a large Ziploc for the flour mix - so much easier to get the coating over every nook and cranny of the chicken. The cooked quick, and after I drained them on a wire rack, I tossed them all into the heated sauce. Wicked good - wet yet still crispy and the flavor was right on - didn't even use ranch dressing to dip 'em in - they were THAT good. It's like a boneless chicken ranch miracle. Yee-haw!
