Blueberry Strata from Sara Lee

  1. Place half of the bread cubes in a lightly greased 9x13 inch baking pan. Sprinkle cheese on top of bread cubes. Top with 1 cup blueberries and remaining bread. In a large bowl, beat together egg substitute, milk, half-and-half, and maple syrup. Pour egg mixture over bread. Cover pan, and refrigerate overnight.
  2. The next morning, remove pan from refrigerator 30 minutes before baking. Preheat oven to 350 degrees F (175 degrees C).
  3. Cover pan with aluminum foil, and bake in preheated oven for 30 minutes. Uncover pan, and bake for an additional 30 minutes, until golden brown and center is set.
  4. Meanwhile, prepare the blueberry sauce. In a saucepan, combine sugar, cornstarch, and water. Boil over medium heat for 3 minutes, stirring constantly. Stir in blueberries, and reduce heat to medium-low. Simmer 8 to 10 minutes, or until the berries have burst. Stir in butter, and serve the sauce over squares of strata.

This was a great recipe! I made it for Christmas Day for the man and I. I didn't make the sauce, i just made my own sauce with frozen mixed berries on the stove with a teaspoon of maple surup (we're not sweet sauce type people) and it was AMAIZING! Only downfall was that my boyfriend said it didn't re-heat very well the next day - blueberries and cream cheese do not make friends the next day. Still, totally worth it - delicious!

Absolutely wonderful! Our favorite! It's sweet, but not too sweet, and the cream cheese adds a creamy texture that is just divine! The sauce was great too, not too sweet as I thought it might be, and was a very nice compliment to the dish. We will have this many more times!
