I think this is a great recipe I did add some taco seasoning it give it an extra kick. Family loves it.

First let me say that I misread the recipe and added two cans of chicken broth instead of two cups. But even with that mistake, this dish was wonderful. All of the broth was absorbed by the rice and the texture of the dish was excellent. My kids, who will not even take a bite of a Spanish rice out of a box...gobbled this up. I will definitely make again and with 2 cans of chicken broth.

I'm Mexican and this is often my go to Mexican rice dish because it's so easy. I do know how to make it from scratch with my family's recipe, but this is fool proof and is quicker and easier to make. NOTE: I've made this with green salsa in place of the red salsa and it tasted equally good.

it was ok. used med grain rice which was a mistake. i also am better at cooking rice using a rice cooker, so i would consider this for next recipe. too bland, so added taco seasoning which gave it a kick.

I followed the recipe exactly as written, including a good saute of the rice. The salsa was not overpowering, but the rice came out a little gummy. But, no one through theirs away!

I make this about once every 1-2 wks and it's a family favorite. Lately I've been making it along with the Chipotle grilled chicken and it is a perfect fit. My only tweek is I use some chopped fresh green onions and Chipotle salsa along with some organic free-range chicken broth, and this Mexican rice is fantastic.
