Best Spanish Rice Recipe Reviews - Allrecipes.com (Pg. 2)

I make this about once every 1-2 wks and it's a family favorite. Lately I've been making it along with the Chipotle grilled chicken and it is a perfect fit. My only tweek is I use some chopped fresh green onions and Chipotle salsa along with some organic free-range chicken broth, and this Mexican rice is fantastic.

YUM!!! Never occurred to me to use salsa! I was low on a red salsa so used green, too. Everyone loved it. I will make this again. :)

It was alright. I probably won't make it again though. Even using Pace medium chunky salsa, it lacked any "umph" or zing. Maybe some added spices would help.

This was good, everyone liked it. I had to keep adding water to my rice because the rice wasn't done in the 20 minutes. I will try again adding more liquid in the beginning. But really turned out good after all. Very easy. I like the use of Salsa.

Well-receieved side dish with our chicken tacos! I was looking for something extra to go with our Mexican-themed lunch, and this (along with Black Beans a La Olla) were perfect! I needed something delicious, Mexican-spiced, and kid-friendly...and easy for me to prepare. This fit the bill - I used a jarred Pace salsa and opted for butter instead of oil, and I couldn't have been more pleased with the resulting flavors of a humble side of Mexi-rice. :)

I have always used a wonderful easy spanish rice recipe I was taught how to make from a mexican lady who makes it for her family. I love the little clove of garlic, finely sliced carrot and corn, she adds to her Spanish Rice. I also added a little more diced onion, to this recipe. She also fries her rice before mixing anything with it. Just till you see it start to brown or becomes translucent. I didn't have the thick picante sauce so I used the mild regular. If you don't have picante, just add some chicken broth, tomato sauce, garlic all into a blender and add it to your water and chicken broth to bring the liquid to the right measure for the spanish rice. That's how my friend does her SRice adding the sliced carrot and corn. Simple but very delicious. Cover and don't peak as suggested in another post. The rice cooked perfectly.

This really was very tasty and couldnt be easier. Great basic recipe, I appreciate all the reviews and great rating, Im sure the recipe is fine as is but altered it to my taste, I like flavor! I sliced 1/2 jalapeno, added chopped garlic, more onions and chopped shallots, traders has that already chopped so I added about 1/3 c of this mixture and added a bit more chunky salsa, a dash of lawrys seasoning salt and 1/2 tsp taco seasoning. I forgot to rinse the rice so it was a "bit" more sticky than I like but I will definitely make this recipe again.

I have made this several times now and it is always so good! My sister is a vegetarian so I use vegetable broth instead of chicken. I do everything else just as it says and its perfect every time!
