This was a great recipe and it turned out great! I've made it a few times now and I love it. I added some cayenne pepper with the salt and pepper mix and season with that blend.

I really like this recipe and today is the second time I'm making it. Even my picky British buddy loves it. I have changed it a little...I use 4 limes squeezed over the top and stuff the cavity with the equivalent of one lime and the neck with 1/2 of a lime and some onion. in the beer I put 2 cloves fresh garlic, a little bit of fresh parsley and some fresh onion. I also put some onion down in the pan with the residual lime juice. I discard the remains of the other 2 1/2 limes. Salt and pepper to taste of course and for the beer I use "Coors"...has good flavor plus the movie "Smokey and the Bandit" rocks LOL! Have fun and make it your own!

I make this all the time; sometimes on the grill and sometimes in the oven; with all different types of beer. It's great and my husband loves it. Add a simple Caesar salad and you've got a meal!!!

The chicken came out nice and moist but didn't retain a lot of flavor. Definitely needs a spice rub or perhaps a brining.

Took longer to cook for a 2.5 lb. chicken, everybody liked it, pretty moist. Rubbed with a mixture of garlic and lemon, under skin.

This was disappointing. I think I am at fault, though. I didn't have any beer in cans, so I used beer in a bottle. It's smelled amazing while it was cooking then tasted like plain old chicken with no seasoning on it. I may try this again using a can of beer. I think it will end up with more flavor.
