1 1/2 pounds
ground beef round
uncooked quick-cooking rice
minced green onions
1 (15 ounce) can
black beans, rinsed and drained
1 (15 ounce) can
hominy or corn, drained
1 3/4 cups
1 (10 ounce) can
original diced tomatoes and green chilies, undrained
1 1/2 cups
finely shredded Mexican cheese blend
I made this for a Mexican potluck party, and it was a huge hit!
However, instead of using beef, I used chicken breast, which I cut into bit-size pieces. I also replaced the water with chicken broth.
I was expecting a lot from this recipe since the description says that it is award winning. I found it to be very bland. I added about half of a jar of salsa (totaling one full jar since I substituted salsa for the tomatoes and green chilies) plus some garlic powder, onion powder, and cumin. I also added salt. The recipe does make a huge pot of food so if you need to feed a crowd with a recipe that does not cost much money, this would be a good choice. Just be prepared to add some seasonings.
1/2 tsp turmeric for all of that? It was very, very bland until we spiced it up with more turmeric, some curry and cayenne.
The recipe is a good starting point for something, but needs help....
