Basil Tomato Soup Recipe Reviews - Allrecipes.com (Pg. 1)

Doesn't need any changes to earn 5 stars, though I do always cut it down to a couple tablespoons of butter. If I'm in the mood, I'll add onions, garlic, red pepper flakes, etc. The fact that it's great EITHER as it stands or as a base for experimentation makes it twice as good!

Great soup, though perhaps a bit too rich for us. I used canned tomatoes already seasoned with basil and that worked fine. Next time might use half and half or milk instead of the heavy cream.

Yum! Mine turned out great even though I made some changes. Made this with 2 cans crushed tomatoes (didn't want to blend anything), 16 oz chicken stock, 1 cup vanilla almond milk (didn't have anything else), and 3 tablespoons butter. Omitted the sugar since I thought the almond milk was a bit sweet. Added 1 TBSP dried basil, and ground pepper to taste. Omitted the salt too. It was perfect. I'm sure it's even better as written above but I didn't want the extra calories from all the butter and heavy cream. Next time I'll try it with no butter at all. Super delish. :-)

Loved it! Made for the 2nd time for hubby & I; my daughter, her hubby, and school aged kids loved it too!I now want to record my additions; no sugar( we like savory), sauteed onions and garlic in (less) butter as recommended, then added the broth and tomatoes. I only had 1 can of diced tomatoes; but added a can of tomato sauce.I had some fresh basil from a sad plant I brought in to over winter in my sun room; added dried to taste. Simmered as directed, then whisked in no fat half & half. Continued to simmer; added fresh ground pepper; a dash of Sherry, and about a 1/4th cup of grated Parmesan. So good; loved serving with grilled cheese for a meatless Tuesday.

Love this recipe with a grilled cheese sandwich. I used half-n-half instead of whipping cream and it was still very rich. Delicious!

I was very impressed with this soup. The only the thing that I changed was the butter, I only use 3TBS but I kept everything else the same and it was GREAT!!!!My kids even liked it. I will be making this more....

Great Base to start for a super simple delicious soup! I only used 2 cans (14.5 oz) of diced tomatoes and kept all of the rest of the measurements the same. Once the tomatoes were simmered, I used an immersion blender for a smoother soup. I turned it Vegan by using unsweetened almond milk, vegable broth and omitting the butter. I did add salt and pepper to taste. Low cal and no additives!

This is SO much better than any canned soup! My kids did not care for it but I loved the fresh taste. This makes A LOT. I think this would be great to take to a pot luck or anything that feeds many :) I will be making this for the teachers at my kids' school (the kids may not love it but I know the teachers will!)

Made this soup exactly as written, but next time I make it, I will add a little more sugar, was a little to acidy for my taste. Was great with grilled cheese sandwiches.
