Ingredients

  • 1 1/3 cups all-purpose flour
  • 2/3 cup whole wheat flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 cup mayonnaise*
  • 3/4 cup sugar
  • 1 cup mashed ripe bananas

Directions

  1. In a bowl, combine the flours, baking soda and salt. In another bowl, combine mayonnaise, sugar and bananas; stir into dry ingredients just until moistened. Fill greased or paper-lined muffin cups two-thirds full. bake at 350 degrees F for 20-25 minutes or until a toothpick comes out clean. Cool for 5 minutes before removing from pans to wire racks. Serve warm.

  • Reduced-fat or fat-free mayonnaise may not be substituted for regular mayonnaise in this recipe.
