Original Recipe Yield 1 - 9x13 inch pan
 

Ingredients

  • 1/2 cup butter
  • 1 1/2 cups white sugar
  • 2 egg
  • 1 teaspoon vanilla extract
  • 2 cups sliced bananas
  • 2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/4 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1 cup dates, pitted and chopped
  • 1/2 cup chopped almonds
  •  
  • 1/4 cup butter, softened
  • 1/8 teaspoon salt
  • 2 tablespoons lemon juice
  • 1/2 teaspoon vanilla extract
  • 1 1/2 cups confectioners' sugar

Directions

  1. Preheat oven to 350 degrees F (175 degrees C). Grease a 9x13 inch baking pan.
  2. In a large bowl, cream margarine and sugar. Gradually mix in eggs and vanilla. Stir in bananas. Sift together the flour, baking powder, baking soda, and salt. Stir into the sugar mixture. Finally, fold in dates and chopped almonds.
  3. Spread batter evenly into prepared baking pan. Bake in preheated oven for 30 to 35 minutes.
  4. While the bars are baking, You can make the lemon icing. In a small bowl, Mix together salt and confectioners sugar. Stir in soft butter, lemon juice, and vanilla. Beat until smooth.
  5. When bars are cool, spread the lemon icing over the top and cut into squares. Mmmm Mmmmm!
