Banana Butter Icing

Original Recipe Yield 2 1/3 cups
 

Ingredients

  • 1/4 cup butter, softened
  • 1/2 cup mashed bananas
  • 1/2 teaspoon lemon juice
  • 1/2 teaspoon vanilla extract
  • 3 1/4 cups confectioners' sugar

Directions

  1. Cream together butter, banana, lemon juice and vanilla. Slowly beat in confectioners' sugar, adding more if needed to make a nice fluffy, spreadable icing. Makes about 2 1/3 cups.
