I use 3 eggs, bisquick reduced fat mix, Stevia in place of sugar, and applesauce instead of butter. It is delish!

I just pulled these out of the oven as my 18 year old (picky) son walked in from school. He ate an entire loaf and said it was the best banana bread he's ever eaten. I did do as some suggested and did 1 cup white sugar and 1 cup brown sugar. Thanks for the wonderful recipe.

Very yummy bread, although I had to make some revisions due to ingredients on hand. I substituted 1/2 cup butter and 1/2 cup of apple sauce for the shortening. And, I was out of baking soda, so used 6 t of baking powder instead. I also added 1 1/2 cups of chopped walnuts. This recipe made two large, very dense and wonderful loaves. We ate one and froze the other for later on.

I've been searching for the perfect banana bread...very flavorful, moist, banana-ey....and this is the best out of all the recipes I've tried. It's perfect. The only substitution I make is using yogurt instead of shortening. It's healthier...changes the texture to make it a little less crumbly and more chewy like bread, but in a good way. For variations try using cream cheese or sour cream or applesauce in place of oil or in this case shortening and if you wanna play around with the flavors try adding fresh/frozen fruit (strawberry banana bread is a good combination) or using peanut butter. This is my permanent base recipe for banana bread now and good by itself or with any of my tinkering when Im in the mood for something different! Happy baking! Yummy!! Ps: walnuts are sooo good in this. Makes about 24 muffins if any one is curious, although I guess it depends on your muffin size.

Delish! I made it exactly the way the recipe said. The only drawbacks were that I had to cook the loaves for nearly another half hour than what the recipe stated, and upon cooling the center of the cake caved in a bit. Heck, I didn't care. The crust was so crispy and delicious and the cake is moist and soft. So easy, too!

I did half brown sugar and half white sugar, and I also tossed in about 1/2 a tablespoon of ground cinnamon. The kids LOVED it. For half a batch of muffins I also put some raisins in and that was good too.
