I've been searching for the perfect banana bread...very flavorful, moist, banana-ey....and this is the best out of all the recipes I've tried. It's perfect. The only substitution I make is using yogurt instead of shortening. It's healthier...changes the texture to make it a little less crumbly and more chewy like bread, but in a good way. For variations try using cream cheese or sour cream or applesauce in place of oil or in this case shortening and if you wanna play around with the flavors try adding fresh/frozen fruit (strawberry banana bread is a good combination) or using peanut butter. This is my permanent base recipe for banana bread now and good by itself or with any of my tinkering when Im in the mood for something different! Happy baking! Yummy!!
Ps: walnuts are sooo good in this. Makes about 24 muffins if any one is curious, although I guess it depends on your muffin size.
