This was heavenly! I debated whether to use sour cream or ricotta, but went with the sour cream. Fantastic!
Do not substitute. It gave the dish just the right hint of a tang. Lighter than ricotta. I make my own sauce, so did not use jar sauce. This is a new favorite. Great for company, too. (yes, bake it covered, but remove foil last few minutes to brown the top.) Forgot to mention we are gluten free, so I used Schar's gf penne. Worked like a charm. No one could tell any difference.
